Cheddar Bacon Wedge Salad | Camping Food




cheddar-bacon-wedge-saladIf you’re like me, roasting hot dogs for dinner gets real old at the camp site. Don’t get me wrong, it is the end-all for younger kids, but if I have to eat one…more…hot….dog…..<ugh>.

We went camping for a quick overnight trip and I didn’t want to pack a lot of ingredients. I found this GREAT recipe from Ree Drummond of The Pioneer Woman. I made a few modifications to make it easier in a camping environment and it worked splendidly.

INGREDIENTS (camping style)

– 1 package of bacon bits
– 1 head of iceberg lettuce
– 1/2 cup shredded cheddar cheese (or your favorite type of cheese)
– Ranch Dressing (we used travel size packs Wild Coyote Ranch cups: best dressing on EARTH!)

INSTRUCTIONS

Cut iceberg in half, through the middle and then cut halves into wedges. Do not remove the core or the wedges will fall apart (trust me). If you aren’t sure exactly what I mean, watch this quick video on how to cut lettuce wedges.

Lightly dress your wedges (or drench it if you want!). Sprinkle cheese and bacon bits on top of wedges.
